How to use it

Grease it before every batch. Non-stick or not, a drop of oil or butter spread inside each well with kitchen paper is what makes the pancakes come out whole with a clean edge.

Medium-low heat and a bit of patience: on high heat the batter browns outside before it sets inside. Fill each well two-thirds, the batter grows. When bubbles appear on top, flip them with a silicone spatula.

Works on induction, gas, ceramic and electric hobs. Not oven safe.

Care

Let it cool before washing: putting it hot under the tap warps the aluminium and punishes the non-stick.

Warm water, mild soap and a cloth or the soft side of the sponge. No scouring pads and no metal utensils inside the wells: use a silicone or wooden spatula.

Do I still need to grease it if it's non-stick?

Yes, it's worth it: a drop of oil or butter spread inside each well with kitchen paper, before every batch. It's ten seconds, and it's what makes them come out whole with a clean edge.

Does it work on induction?

Yes, and on gas, ceramic and electric too. The only thing it can't do is go in the oven.

Can I fry eggs in it?

Yes, but size small. The wells are made for pancakes: with a bigger egg the white overflows the edge. A small egg comes out perfectly round.

Is it dishwasher safe?

Better not. Tablet detergent is harsh on the non-stick, and on a moulded pan you notice it sooner. By hand, with warm water and the soft side of the sponge, and once it has cooled.
